Tesoro Club’s Celebrated Chef Guy Rettig Shares the Dish on His Culinary Journey

Well known for its popular waterfront restaurants and award-winning dining scene, Florida’s Treasure Coast just north of the Palm Beaches has grown into a foodie’s paradise. Now, for Members of Tesoro Club, the culinary journey expands to new heights, and it’s all happening behind the gates of this extraordinary private club community. Executive Chef Guy Rettig, a culinary veteran with an extraordinarily impressive resume, has been delighting Members with meticulously crafted menus across the Club’s two newly opened dining venues. Let’s meet Chef Rettig and see what he has cooking now.

It All Began with Classical French Training

For over 25 years, Chef Rettig has led culinary teams in platinum-rated golf and yacht communities, boutique-style resorts, and AAA guide-rated dining establishments. Rettig was mentored in classical French cuisine by some of the industry’s greatest, including Jean Louis Palladin at the Watergate Hotel in Washington DC and Roger Putier at La Petite Auberge in Newport, Rhode Island. He even received three stars from both Mobile and AAA travel guides at his first Executive Chef position at Le Canard in Vienna, Virginia. Since then, he has shared his culinary passion across the nation, including The French Laundry in Napa Valley, California; Frenchman’s Reserve in Palm Beach Gardens, Florida; and the Cullasaja Club in Highlands, North Carolina. Rettig prides himself on being a hands-on chef, sharing his passion with his team while going above and beyond to assist Members with every request.

“Throughout my career as an Executive Chef, I have been the opening chef at numerous clubs, restaurants, inns, and boutique hotels, and I believe it is a thoroughly invigorating experience,” said Chef Rettig. “Having the opportunity to be a part of this process again at Tesoro Club was an opportunity I couldn’t pass up. It’s a wonderful locale, with such a great group of people and wonderful owners.”

Elevated Cuisines Served with a Touch of Florida Breeze

As one of the two venues within Tesoro Club, Chef Rettig prepares a seasonal menu for the Terrace Grill, with most ingredients regionally sourced from local farmers and growers. Located on the second floor of the landmark Clubhouse, the indoor/outdoor venues’ views of the Palmer championship golf course provide a stunning backdrop for every meal. The standard menu features casual favorites with an elevated twist, including a Caprese grilled chicken sandwich, sesame-seared tuna salad, wild mushroom flatbread, burgers, and more. Yet Rettig is also renowned for providing an ever-rotating series of specials that indulge all the senses. From a blueberry duck roast and tuna poke to homemade meatloaf and calypso crab-stuffed avocado, Members can always try something new at this timeless venue.

Tesoro Club Members Ernesto & Emmelis Keany have loved the food that’s available within The Terrace Grill. “We love having lunch or dinner at the Club,” they shared. “It doesn’t feel like regular Club food, but rather like we’re going to a great restaurant in Palm Beach. Yet we’re still home.”

Tropical Libations Served Poolside

Located within the Swim & Racquet Club, Tesoro Club’s second dining venue, The Cabanas, is perfect for Members looking to sit back and relish in the Florida sunshine. Surrounded by palm trees and nature preserves, this outdoor dining venue next to the resort-style pool has a tropical ambiance. A full-service bar in the covered patio area provides a wide array of craft cocktails, local beers, and globally sourced wines. Members can sip on a Sunrise IPA from the local Sailfish Brewery, or enjoy a handcrafted Tesoro Smash with Bulleit Rye, Hibiscus Syrup, berries, and mint. Chef Rettig is also planning a full menu for the season, with upscale new American cuisine items that are exceptionally seasoned and elegantly presented.

A Masterpiece by Any Measure – Tesoro Club

Just a short golf cart ride away from any home, residents at Tesoro Club will find a plethora of resort-style amenities. The popular Swim & Racquet Club is open to Social and Golf Members and includes a junior Olympic, zero-edge swimming pool, nine Har-Tru tennis courts, eleven pickleball courts, and two bocce courts. The landmark main Clubhouse offers Members salon and spa services, a state-of-the-art Fitness Center with the latest cardio and strength equipment, and a growing roster of fitness sessions.
