For over 25 years, Chef Rettig has led culinary teams in platinum-rated golf and yacht communities, boutique-style resorts, and AAA guide-rated public restaurants. Rettig was mentored in classical French cuisine by some of the industry’s greatest, including Jean Louis Palladin at the Watergate Hotel in Washington DC and Roger Putier at La Petite Auberge in Newport, Rhode Island. Since then, he has shared his culinary passion across the nation, including The French Laundry in Napa Valley, California; Frenchman’s Reserve in Palm Beach Gardens, Florida; and the Cullasaja Club in Highlands, North Carolina. Rettig prides himself on being a hands-on chef, sharing his passion with his team to create unique culinary dishes from scratch.

Rettig is looking forward to bringing his decades of expertise to Tesoro Club and bringing together a new culinary team of experts. “Throughout my career as an Executive Chef, I have been the opening chef at numerous clubs, restaurants, inns, and boutique hotels, and I believe it is a thoroughly invigorating experience,” said Chef Rettig. “Having the opportunity to be a part of this process once again in a wonderful locale, with such a great group of people and wonderful owners. Well, I just could not pass that up!”

Located at the Swim & Racquet Club, residents will soon be able to sit back and relish in the Florida sunshine at Tesoro Club’s poolside grille. Surrounded by palm trees and nature preserves, this outdoor dining venue next to the resort-style pool will have a tropical ambiance. A full-service bar in the covered patio area provides tropical libations, while a casual menu offers something for every member of the family. Chef Rettig describes the menu of this poolside retreat as “Floribbean” style cuisine, with everything from juicy burgers and sandwiches to fresh seafood and salads available.

The Golf Grille

On the second floor of the Landmark Clubhouse, Members will find a full-service restaurant, bar, and lounge perfect for celebrating a great round of golf, or for planning the next one. Floor-to-ceiling windows offer stunning views of the nature preserves and two championship golf courses, while televisions and lounge seating offer plentiful spaces to cheer on sports teams. The Golf Grille leads to an expansive stone terrace, where fire pits and lounge areas overlooking the Club’s practice driving ranges provide the perfect place to converse with friends or stargaze into the Florida night sky. Combining the two areas, a full-service indoor/outdoor bar provides plentiful beverage options for every member of the family.

Chef Rettig is planning a seasonal menu for this timeless venue, with most ingredients regionally sourced from local farmers and growers. From sliced braised short rib to jumbo lump crab wrapped in a smoked salmon rosette, the menu will be filled with upscale new American cuisine items that are exceptionally seasoned and elegantly presented.

“No matter where residents choose to dine, each venue will share a single common denominator and our team’s motto: exceptional chefs cooking exceptional food for exceptional people,” said Chef Rettig. “We look forward to welcoming people into these new dining venues very soon.”
